Walnut Patties
Adapted to be vegan, from a recipe from Lillian Anderson
- 1 cup vegetable broth or unsweetened vegan milk
- ½ cup chia seeds
- 1 cup walnuts
- 1 onion
- 2 stalks celery
- 1 Tablespoon seasoning salt
- 2 Tablespoon parsley flakes
Mix in large bowl
- 1 ½ cup oatmeal
- 1 ½ cup vegan breadcrumbs dry
Whiz the first 7 ingredients in a blender or food processor until smooth.
Add the wet, blended ingredients to the dry and stir well. Allow the dry ingredients to absorb the liquids. About 15 minutes.
Drop heaping tablespoonfuls onto hot frypan. Brown on both sides and arrange in a casserole dish.
Make mushroom gravy and pour over patties until they are covered.
Cover the dish with foil and bake for 350° for 45 to 60 minutes. Remove from the oven when gravy is bubbling.
