Walnut Patties

Adapted to be vegan, from a recipe from Lillian Anderson

Equipment

  • 1 9" x 9" casserole dish
  • 1 food processor or blender

Ingredients
  

  • 1 cup vegetable broth or unsweetened vegan milk
  • ½ cup chia seeds
  • 1 cup walnuts
  • 1 onion
  • 2 stalks celery
  • 1 Tablespoon seasoning salt
  • 2 Tablespoon parsley flakes

Mix in large bowl

  • 1 ½ cup oatmeal
  • 1 ½ cup vegan breadcrumbs dry

Instructions
 

  • Whiz the first 7 ingredients in a blender or food processor until smooth.
  • Add the wet, blended ingredients to the dry and stir well. Allow the dry ingredients to absorb the liquids. About 15 minutes.
  • Drop heaping tablespoonfuls onto hot frypan. Brown on both sides and arrange in a casserole dish.
  • Make mushroom gravy and pour over patties until they are covered.
  • Cover the dish with foil and bake for 350° for 45 to 60 minutes. Remove from the oven when gravy is bubbling.
