Walnut Patties
Adapted to be vegan, from a recipe from Lillian Anderson
Equipment
- 1 9" x 9" casserole dish
- 1 food processor or blender
Ingredients
- 1 cup vegetable broth or unsweetened vegan milk
- ½ cup chia seeds
- 1 cup walnuts
- 1 onion
- 2 stalks celery
- 1 Tablespoon seasoning salt
- 2 Tablespoon parsley flakes
Mix in large bowl
- 1 ½ cup oatmeal
- 1 ½ cup vegan breadcrumbs dry
Instructions
- Whiz the first 7 ingredients in a blender or food processor until smooth.
- Add the wet, blended ingredients to the dry and stir well. Allow the dry ingredients to absorb the liquids. About 15 minutes.
- Drop heaping tablespoonfuls onto hot frypan. Brown on both sides and arrange in a casserole dish.
- Make mushroom gravy and pour over patties until they are covered.
- Cover the dish with foil and bake for 350° for 45 to 60 minutes. Remove from the oven when gravy is bubbling.
